I love to cook dinner.. I love it even more when my husband cooks for me but I really love to cook too. There's nothing like acing a recipe and making it your own.
We're always on a budget so when I look up recipes, I look for ones that have very few and easy ingredients. The one I found on Pinterest was just a Spinach pasta with an olive oil dressing. I had some left over spinach from salads that was on its way out and I wanted to use it before it went to waste. We also have an abundance of asparagus from a baby shower we hosted the other weekend, so i tossed that in too.
We didn't have any parmesan cheese and other simple ingredients so Nolan and I made a trip to the Dollar Tree (my favorite place to go when we have no money). In our basket was thin spaghetti, parmesan cheese, olive oil, and chorizo. Only $5! Gotta love it!!

Recipe:
1 package of thin spaghetti (or any type of pasta you want)
10-15 stalks of asparagus (washed and cut into thirds)
Handful of spinach (or more, thats all I had left)
3 cloves of garlic
Olive oil
Salt to taste
Red crushed peppers
1/3 cup of chorizo (or ground turkey or beef)
Fennel Seeds
Basil
Lemon juice and zest
Red wine
Onion powder
Parmesan cheese
Cook time 15-20 mins
1 package of thin spaghetti (or any type of pasta you want)
10-15 stalks of asparagus (washed and cut into thirds)

Cook time 15-20 mins
- Cook spaghetti as instructed on box. Add salt and oil to water.
- In a small pan put oil and asparagus on high heat. Add salt. Add red wine and cover for a few mins then lower heat.
- In a another pan add chorizo. Add plenty of fennel seeds, onion powder, and basil to make a more Italian taste. Mix, then add red wine. Once cooked through lower heat to keep warm.
- Once the pasta is more than halfway done, add chopped garlic to asparagus and some salt.
- Pasta should be done by now, drain in colander in sink.
- Asparagus should be tender. Add chopped spinach and a little more salt.
- Put spaghetti into a bowl then add the asparagus and spinach mixture and stir together. Drizzle a little olive oil on top and a pinch of salt and red crushed pepper.
- Take a wedge of lemon and squeeze over dish. Take a cheese grater and put lemon zest on top.
- Top with some chorizo (add however much you'd like just remember it is salty and has a bit of spice to it, its also extremely fatty!). Sprinkle with parmesan cheese.
- Last but not least pair with a favorite wine, I chose a Sauvignon Blanc, and enjoy!
