I was watching the Food Network and saw one of the cooks make a sweet potato hash and it looked amazing! So I decided to make it! Here you go:
Sweet Potato Hash:
3 small sweet potatoes
1/2 yellow onion diced
3 garlic cloves minced
1 red, yellow, orange, or green bell pepper diced
4 minced jarred Jalapeños
Use a tiny bit of juice from jalapeño jar
Avocado oil
Salt
Pepper

- Heat large pan
- Put in onion and garlic with oil and salt.. wait till they sweat a little
- Throw in sweet potatoes.
- Cover with lid and let them steam.
- Once potatoes are soft put the bell peppers and jalapeños in.
- Use a pinch of salt and some pepper for flavor.
Chicken:
- Heat another large pan with oil
- Mark chicken by scoring it with a sharp knife.
- Pour oil over so it gets inside then season with seasoning salt and pepper.
- Place in pan to cook until good color on either side and cooked all the way through.
- Once the chicken is cooked put blue cheese on top and cover with a lid so it can melt.
Place hash on the plate first, then chicken. Top with avocado and cut up spinach.
